Description
- Malay Name: Ubi Kayu (sometimes Ubi Jalar, though this can also mean sweet potato).
- Appearance: It has a long, tapered shape with a tough, fibrous brown skin that is typically peeled before cooking. The flesh inside is white or cream-colored.
- Flavor & Texture: The raw flesh is starchy and mildly nutty. When cooked, it becomes soft, starchy, and fluffy, absorbing flavors well.
- Health Note: Tapioca must be cooked properly before consumption, as raw tapioca contains cyanogenic glycosides that can be toxic. Boiling or frying completely neutralizes these compounds.
